    Easy Avocado Chocolate Pudding

    Chickpea Salad Sandwich
    Mash together canned chickpeas and 1 large or 2 small avocados.
    Add the juice of a 1/2 of a lemon, 1 Tbs Dijon mustard, salt & pepper to taste, chopped green onion, and whatever fresh herbs you like such as cilantro, parsley, or thyme.
    Throw in a tablespoon of wheat germ for extra B vitamins and fiber and mix it all together.
    Spread on toasted whole grain bread with your favorite sandwich veggies and enjoy!
